NAM’s kitchen: How to prepare dried meat

Today we want to share our experience in preparing dried meat with you. Here is a short recipe how to dry beef or pork.

  1. Slice lean meat against the grain into ca. 0.2 inch (0.5 cm) thick slices.
  2. Pour some condiment over the both sides of a slice.
  3. Place the slices on the grate using wooden toothpick.
  4. Put the grate into the oven. The meat should be dried at ca. 212ºF (100°C). The oven door should be left ajar to permit the escape of the evaporated moisture from the oven.

In this case the process took about three hours. The dried meat should be stored in a dry place under a paper cover. Although processed over four months ago, it is still edible.
